Eggs Vs Me

I cooked up a fried egg in butter. I successfully turned it over and did not crack the yolk nor cook it too solidly. Yet, I could not stomach more than three bites. I briefly thought to keep it in front of me and read or doodle. You know, just pass the time and try again in ten or fifteen minutes. UGH. Cool cooked egg...nasty. Yet, I wanted that protein that was sitting on my plate now in a gooey yellow mess.

Why is it I have trouble eating eggs? Would I have been better served with chicken. Not that I can eat more than a few bites of chicken.

My surgeon said to eat  within 50 minutes and be done with my food. He said to toss it. He is not privy to all the food that I have tossed. My disposal eats more per day than I do.

Today, I vowed to clean out the fridge of all those leftover items that are possibly going bad or have departed being useful. It is still on my to do list.

I still have some good leftover Chicken Taco Soup with beans chilles and tomatoes. It was so good. I just cannot eat it daily. The beans do a number on the atmosphere around me.

Do you have issues with eggs? I have tried and tried to incorporate eggs. I make delicious quiches that my grandsons and husband adore. I alone eat just a bit.

My first experience with eggs post surgery was not good. I did not feel well. I did not vomit but felt close.

Weeks later, I tried again. I was well past the pureed stage and had been eating lots of different things. My scrambled eggs were light and fluffy. They looked great. Rejected by my little stomach.

Months later, I tried again with so much water that they were pale. It was a miracle. I ate about 3/4 of an egg.

Since then, I try monthly to down at least part of an egg. If I ate a whole egg, I would be amazed.

You can see by this writing that I have and will continue to try eggs in different forms.
